DOC began as a humble pizzeria in suburban Melbourne which has now grown into a modern Italian Gastronome. Italian food and culture is the back bone of DOC, and its pursuit and requirement for excellent produce, charcuterie, cheese and above all experience is its mission.

Chef Bio

Tony Nicolini – grew up between flour and tomato in his father’s pizzeria, the first in Queensland (opened in 1969), and since has lived and breathed the most genuine of Italian hospitality. A man of two cultures, Nicolini has a mission to reconcile both Italian gastronomy and his Australian heritage. He opened his first Pizzeria in 1997 and since then his Group has become a brand synonymous with modern Italian cuisine. Nicolini’s mission is to teach Italian hospitality to his more than 150 employees, from young students to experienced workers in the sector, he personally has a hand in shaping their careers. Importantly he is helping shape the Italian restaurant landscape here in Melbourne spreading ITALIAN-ALITY!
